SHEPHERD'S PIE

Yields: 6 Servings

Shepherd&apos>s Pie is an example of the resourcefulness of the English. Here, left over meats and vegetables are used to create a wonderful new meal.

Ingredients:
3 cups cooked lamb, chopped
2 large cloves garlic, peeled
1 medium onion, quartered
1 tsp chopped rosemary
¼ pound butter
2 tbsps flour
¾ cup beef broth
salt and cracked black pepper to taste
4 medium potatoes, cooked and mashed

Method:
Preheat oven to 325°F. In a mixing bowl, combine lamb, garlic, onion and rosemary. Grind ingredients twice in a meat grinder or chop finely in food processor. In a skillet, melt butter over medium heat. Stir in flour and cook until smooth and blended. Slowly pour in beef broth. Cook 5 minutes or until thickened. Add lamb mixture to skillet and stir to blend well. Season to taste with salt and pepper. Spoon mixture into a 1½-quart casserole or deep pie dish. Spread mashed potatoes evenly on top of lamb mixture. Make crisscross designs on top with fork. Bake 45-50 minutes or until meat is bubbling hot and potatoes are browned.
